Hahas actually i wanted to switch to writing something else on this entry, but since the response is kind of good, shall attempt to write some more entries regarding it (when theres still things to write =p)
Hmm last sunday was kind of horrible..very frantically busy!!! By the way, i switched my sat job with James coz he went night cycling with the other people and apparently its impossible to ask him to start working on sun after cycling for one night! Even nf also switched his job..
Actually i sort of expected yvonne to be late coz she told me before that its impossible for her to wake up that early on sunday to go and work..but i didnt expect bryan to be absent..it makes a lot of diff without bryan around..he's sort of the master baker there..hahas..and his cheese cakes are brillant! light and fluffy and the colour is just right..=)
Anyway, so i waited for yvonne from 730 till 8 plus and when we start work it's already close to 9..on normal days we start work at 730 prompt when bryan is around and by 1030 all the 6 rounds (6 * 4 * 4 = 96 cakes) of cakes are out already..but due to the delay by 1030 only the 1st round of cakes is out..very extremely rush..and pian pian the delivery man came at 1030 instead of the usual 11plus..yvonne was quite mad at him..poor patrick..hahas
Theres this one time that the new trays are coming out and the old trays have no time to be cleared, and there are 6 boards of cakes waiting to be packed, at the same time michelle ( the big boss) called and there are customers waiting to be served!! OMG it was really frantic for poor me and yvonne, and in the rush i keyed in some wrong stuff, resulting in shortage of money =(
Luckily in the afternoon when all the cakes have been delivered we finally have time to take a break..and i was very happy that yvonne taught me to make chous!! yay!! Maby it's really true that there is a price to pay for every benefit to gain ba..having only 2 people to tend the shop is quite taxing but on the other hand u get to learn more things..=)
U need 3 kg of water plus 2.9 kg of butter melted and brought to boil in a pot, and add one drop of lemon flavouring plus some vanilla essence and salt for abt 10 trays of chous..then pour the whole thing into the mixer filled with dunno how many kg of flour, then start mixing, by the way mixing and beating is different, and u use different tools..hahas =)
After that u crack 60 eggs (no need to separate!) and add them 2 by 2 into the mixer, coz it will spill out..till u get this very nice batter for the chou..oh yvonne said that my lunch break was abit too long and it resulted in the batter becoming abit hard..oops..
Then u grease the trays and comes the most importing part..the piping!! Hahas the piping is more tough then i have thought..i think its because at 1st my predicted level of difficulty is 10, then yvonne sae its not very hard, so it dropped to 6, then when i do it increased to 8..hahas so in the end in reality it still might be easier then i have thought ba..ok nvm..hahas =P
So u fill the piping bag abt 3/4 full with the batter, if u fill it too full u cant hold properly..and twist the top part around ur finger to "lock" it so that the batter doesnt come out when u squeeze the bag..at 1st the batter jus doesnt come out no matter how hard i squeeze..till my face red already also no use..hahas..but later got better la..ur hands are super tiring u noe!! very suan1! Hahas..in the end i decided just no matter wad ways get tthat thing out and thats it..hahas so i was very slow loh..and i got batter all over my hand and it got very slippery and everything got worst..hahas..but still ok la in the end..(p.s. after observing bryan on tue i concluded that it's because my hands are too small, so cant hold properly..hahas =p)
When the chous are ready u need to cool them and CONTINUE to pipe fresh cream inside...just whipped cream la, but very light..i asked yvonne how much u need to pipe and she commented u need to "feel" it..hahas..i think sort of piped too much into some and they became quite heavy =p.. and some chous were really too small and cant be sold so i brought back like 5..hahas..
That night is quite horrifying i would say, coz nf did't come and michelle came at 6 and told me i was supposed to do closing that night without any prior notice..=X..she was in a mad rush and only rushed through what i was suppose to do..so i ended up calling nf and asking him to tell me what to do step by step..really a big big thank to u nf!! If not i would have been stranded in the shop that night..hahas..and its just amazing u can remember exactly each and every detail about closing..O.o I left at about 9 that night..very tired..
On tue it was even more enriching!! i learned to make peanut cookies that day..though the dough never seemed to go down..hahas..i took like 2.5 hours to finish the peanut cookies till 430 pm..the smell of the cookies are very nice!! and later in the afternoon mr lim taught me how to ice the sliced cakes..actually u just have to spread the layered cakes with chocolate mango and strawberry cream, 2 layers, on this rotating thingy..hahas..8 cakes for each flavour..it makes me feel like i have moved on to the next level of my baking journey..coz i taught i would need like a month before i reach that stage..hahas..yay!! Really shuang!! and mr lim is really very nice, coz im supposed to crack eggs after making the cookies, but he said its ok. he will do the eggs for me and i do the icing instead..=)
Yups thats about all..long enough liao la! And to James and ningfei: take lots of care and rest well kkz!! If not i got to work 7 days a week till night time already..hahas jkjk la..yup! Get well soon!! =D
